    Share Your Sneaky Food Secrets

    We're thrilled to have Missy Chase Lapine (aka The Sneaky Chef) back on Ignite!  After all the fun we had with her bestselling first book -- The Sneaky Chef: Simple Secrets for Hiding Healthy Foods in Kids Meals -- we're bring her back to Ignite to talk about her second book, which is focused on adults -- The Sneaky Chef: How to Cheat on Your Man in the Kitchen.  Throughout May, Missy will be sharing her secrets for making everyday food healthier.  And in June, Missy will join us live for an online chat (stay tuned for details).  Whether it's an appetizer, entree or dessert, she's got a trick to boost the health.

    We know some of you are already adding healthy ingredients to your meals at home -- and some of you may want some new ideas.  So please share your sneaky tricks here for all Igniters to see!

    It's not that sneaky...but I always put spinach in my spaghetti sauce. It adds the vitamins and nutrients of a green vegetable without the gritty taste of plain spinach. I usually use frozen spinach; it's convenient and doesn't go bad.

    I loved the first book, The Sneaky Chef.  It started me thinking on how to get more vegetables in my families meals.  And here is one they just love.

    Homemade Cauliflower Mac and Cheese

    Steam one head of Cauliflower.  Add to food processor and puree.  In a saucepan create your favorite cheese sauce using cauliflower as the base, I add, skim milk, reduced fat cheddar cheese, Velveeta 2%.  Cook until cheese is melted.

    Pour over your favorite whole wheat pasta.  Top with whole wheat bread crumbs sprayed with I can't Believe it's Butter Spray and bake at 350.

     My kids love to "dip" foods (e.g hot dog in ketchup or chicken in barbeque sauce). But when it comes time for dipping snack - they love Wheat Thin crackers and hummus. Introduce it to them early and they'll never know that cheese dips or any of the other unhealthy dips exist. Not to mention you get them started early on health snack chip.

    My husband loves fries and I have a 'sneaky' way of making a healthy version at home. I use sweet potatoes (they are starchy like regular potatoes but with a lot more nutrients in them and better tasting, in my opinion). Instead of deep frying them I sprinkle some seasoning --  sea salt, black pepper, cayenne pepper -- and drizzle a little bit of olive oil and then bake them in the oven. If you like crisp fries, make sure to slice them thin. These are a great replacement for regular fries as they can satisfy your craving without any guilt!
